Grab towels and start mopping. — Costs you. Understandable, and it's the wrong order. Mopping treats the water that has already escaped while more of it arrives, and it destroys the evidence your insurer will ask for. The water is still coming. Stop the source first, photograph second, mop third. Every minute spent mopping a floor that's still being filled is a minute the failure keeps running.
Try the tap or fixture again to see if it's still doing it. — Costs you. It is. Restoring supply to test a leak simply delivers more water to the failure. The same applies to reflushing a toilet that just overflowed, and to running a drain to check whether a backup has cleared — with a downstream blockage, everything you send down comes straight back into the lowest fixture in the property.
Put a bucket under it and deal with it in the morning. — Costs you. A bucket manages a drip. It does nothing about the water that's soaking into the ceiling around the drip, and a leak that appears small at a ceiling is frequently much larger at its source — because most of it never gets as far as the bucket. The repair cost of a leak is fairly stable. The damage cost isn't.
Tighten the leaking fitting. — Usually costs you. Sometimes a fitting is genuinely loose. More often it's leaking because a washer, seal, or thread has failed — and force applied to a corroded fitting cracks it, converting a drip into a flow. The same instinct cracks toilet porcelain when someone over-tightens the bolts on a rocking toilet.
Shut the water off. — Correct, and the most valuable thing you can do. Nothing else you do in the first five minutes matters as much. If you can isolate at the fixture, do that; if you can't identify the source or the fixture stop won't hold, use the main.
Photograph everything before touching it. — Correct, and almost nobody does it. Standing water at its full extent, the damaged materials, the failure point, and the time. It takes twenty seconds and it's the difference between a documented claim and an argument.
One more thing worth doing today, not during: find your main shutoff, check that it turns, and tell someone else in the household where it is. Knowledge held by one person who happens to be away is no knowledge at all.

Is anyone at risk? Gas smell, a sounding carbon monoxide alarm, fire, injury, or water reaching electrical equipment you can't isolate safely. Can it be stopped? Water escaping that you cannot shut off is the highest-urgency version of any plumbing problem, because damage accumulates while we drive. If you've already isolated it, the situation has changed considerably — and we'll tell you honestly whether it can now wait for standard hours.
Is it contaminated? Clean water from a supply line is one job. Sewage is another — a contamination event as well as a plumbing one, which changes what we bring, how the area gets isolated, and whether you should be in the room.
Is it still spreading? Water travels along the flattest route rather than the shortest, through ceilings and along joists, into rooms that seem unrelated. A leak that stopped appearing hasn't necessarily stopped.
