Grinding food waste is the easy part. A working disposal reduces scraps to slurry in seconds and has been doing it reliably for years.
What happens next is where the problems live. That slurry has to travel a discharge tube, negotiate a trap, run the length of a branch line, and join the main — and at every one of those stages something can catch it.
Which is why the most common disposal complaint we hear is "it runs perfectly but the sink won't drain." The unit is doing its job. Something further along isn't. And a great many perfectly good disposals get replaced while the actual blockage stays exactly where it was, a metre downstream, untouched.
So the useful thing isn't to look at the appliance. It's to follow the food.

Stage 1 — The grinding chamber. Where waste is reduced by impellers spinning against a shredder ring. What goes wrong here: jams from bones, fruit pits, cutlery, bottle caps, or glass; fibrous vegetables wrapping the impellers; and the motor's overload tripping. The symptoms: a hum with no rotation, a unit that trips its reset repeatedly, or nothing at all. This is the only stage that's actually the appliance, and it's a smaller share of calls than people assume.
Stage 2 — The discharge tube. The elbow and short section carrying slurry from the unit into the trap. What goes wrong here: partially ground material settling in the elbow, and — commonly — the dishwasher inlet just above it contributing debris. The symptom: the disposal runs, water backs up in the sink, and the level drops slowly once you switch off. A very frequent cause of a "failed" disposal that hasn't failed.
Stage 3 — The trap. The U-bend below the sink, holding water to block drain odours. What goes wrong here: it's the first place anything heavy settles. Coffee grounds, eggshell fragments, and the fine sediment a disposal produces all accumulate at the bottom of the bend. The symptom: slow drainage that gets gradually worse over months, and sometimes a smell.
Stage 4 — The branch line. The horizontal run from under your sink to the stack. What goes wrong here: grease. This is the stage nobody sees and where the real accumulation happens. A disposal doesn't remove grease — it emulsifies it and sends it down warm, where it cools on the pipe wall and narrows the line a little more each time. Under-ground particles bind to that coating. The symptom: repeated blockages that clear and return on a cycle, and a kitchen line that has been getting slower for a year.
Stage 5 — The main line. Everything from the stack out. What goes wrong here: roots, grease accumulation, and structural defects — none of which the disposal caused. The symptom: several fixtures affected, not just the kitchen, and water appearing at the lowest fixture in the property.
The practical point: stages two through five are drain problems, and only stage one is the appliance. Ask which stage before agreeing to a new unit.
Because grinding and draining are two different jobs.
If the motor turns freely, the impellers spin, and you can hear it working normally, the appliance is fine. Water backing up in the sink means the path out is restricted — the discharge elbow, the trap, or the branch line.
A useful test: fill the other side of a double sink and release it. If that side drains freely and the disposal side doesn't, the restriction is between the disposal and where the two sides join. If both sides are slow, you're looking further downstream, and the disposal is entirely innocent.
Another tell: if the dishwasher now drains poorly or backs up into the sink at the same time, that points at the shared discharge path rather than the appliance.
Replacing the unit in either of those situations changes nothing — you'll have a new disposal grinding perfectly into the same blocked pipe.
Try both before booking anyone.
To identify which: dry everything thoroughly, run the disposal briefly, and watch where the first drop appears. It takes two minutes and it decides whether you're buying a seal or an appliance.
One specific fault accounts for a remarkable share of "my new disposal broke my dishwasher" calls.
New disposals ship with the dishwasher inlet sealed by a knockout plug — a moulded plug inside the inlet port that must be removed before the dishwasher hose is connected. If it isn't, the dishwasher has nowhere to drain. It backs up, sits full of water, or overflows, and the disposal gets blamed.
It's the most common installation error on this appliance, and it happens whenever a unit is fitted by someone who doesn't do it regularly.
The other dishwasher-related faults: a blocked disposal chamber or discharge path, since the dishwasher drains through it; food debris at the inlet port; and a missing high loop or air gap, which lets dirty sink water siphon back into the dishwasher.
If your dishwasher started misbehaving after disposal work, say so when you call. It narrows this to one of four things immediately.
Worth repairing: jams, tripped overloads, switch and electrical faults, flange and mounting leaks, discharge and dishwasher connection leaks, splash guard replacement, and — most often — the blockage downstream that isn't the appliance at all.
Replace when: it's leaking from the housing, the motor trips constantly with nothing jamming it, there's a burning smell, or it has become slow and noisy with no obstruction, which indicates worn bearings.
Also worth replacing: a unit that jams constantly on ordinary food waste and always has. That's usually an entry-level machine in a kitchen that cooks more than it was specified for, and no repair changes it.
One practical note: if the replacement shares the mounting standard of the old unit, installation is straightforward. If not, the sink flange assembly changes too. Worth establishing before choosing a model.

Commercial units are a different class of machine — substantially higher horsepower, continuous-feed designs, and duty cycles a domestic unit wouldn't survive a week of.
Grease dominates everything downstream. Grease interceptor servicing matters more than the disposal itself — a unit feeding a line with an under-serviced interceptor produces blockages on a schedule.
Local rules vary. Some jurisdictions restrict or prohibit food waste disposals in commercial kitchens, or attach conditions to their use. Worth confirming before installing rather than after.
Downtime is the real cost. A blocked kitchen line during service is a closure with health inspection consequences, which is why scheduled maintenance beats reactive callouts in almost every commercial kitchen.

Dry everything, run it briefly, and watch for the first drop. Top means the flange or mounting; the sides mean a connection; the bottom means the housing has failed and the unit needs replacing.

Cold, always. Cold keeps fats solid so they're ground and carried out. Hot melts them, and they re-solidify further along the pipe.
